How to make homemade green Italian olives

Homemade Green olives
Upon receiving olives squash them all till pit is slightly seen
Soak in water for a couple of weeks, changing the water every day or two or until they are sweet not bitter. May take a couple of weeks depends on your preference/taste
Preparing to jar.
Grab jars
Fill each with:
1 spoon of salt
1 spoon of fennel seeds
1 garlic clove
1 slice of lemon
And 1 hot pepper of your choice (optional)
Boil water and fill jars.
Close lids tightly and leave them upside down for a couple of hours or overnight until cool. Store in a cool place.
Wait about a month to eat them..
- once ready to eat take them out of the jar.
- Rinse. And throw them in a hot water bath for 30 min.
- Once done plate and season with salt (if needed) chopped garlic. Tsp of fennel seeds and hot pepper (optional) to taste and oil of your choice..
- Shelf life 1-2 years
